Yup, it's been discussed, along with the inconsistent not-really-vegetarianism. Generally, Mac eats normally in S1, then gradually becomes more and more of a health nut. This was a very common thing in that era, especially if you lived in California.

There's a master list somewhere on this site of everything Mac was ever observed eating and drinking, or even tasting, and when. Lothithil did most of the work on it (although I did contribute a little). I'm pretty sure it finally got finished.

I especially loved the exchange with Sam in the finale. "Don't you have anything to eat around here that isn't healthy?"

One of the novels I wrote, Phoenix Rising, is set right between S1 and S2 and covers Mac and Pete's move from the DXS to the Phoenix Foundation. One of the fun things I got to do was touch on some of the many changes the character went through -- from eating different foods to wearing brighter clothing, as well as the new apartment and the new job!
