I saw a MacGyver last night 2/22. I only saw the last half hour, it had MacGyver driving an old mini cooper and two mini coopers were chasing him and a girl. Can someone tell me what episode this is and what series it was in.

It's the episode 003-Thief of Budapest from the first season.

The scenes involving Minis are in the later part of the episode. Some of those scenes are actually taken from the original Italian Job movie.

Yeah, that's a pretty fun episode.

And some of the original Italian Job movie was filmed in Coventry (the sewer scenes) because the city was being regenerated after World War 2 (my boring trivia factoid for the day).
