This looks like a really interesting video. It has some shots showing the knives being made in the factory as well as looking around in the Victorinox HQ. It also has some interviews with people involved with Victorinox.

Unfortunately it's all in German, so not actually sure what they're saying, but even just watching it is quite interesting.
