I've just did some checking on this. Up until The Lost Amadeus there was never any indication about Mac's first name. In Serenity he introduces him to Penny Parker and she asks 'first or last'. He says: 'yep'. So the 19th century Mac didn't know his first name (even if it was a dream) by this you can presume the 20th century Mac didn't know it either at the time.
Than in the Lost Amadeus Lulu goes: 'that's your first name?' so there's a first indication he did know.
But than in Harry's Will Mr. Newberry says he's a bit in a panic because Mac's first name is nowhere to be found. In which Mac replies: 'It's just MacGyver'. So where's the first name now? Now you can assume he'd be registered in official documents with just MacGyver. Shouldn't there be a full first and last (and maybe a middle) name on official documents like birth certificates, wedding certificates, death certificates, the population registers, degrees, statements, wills? Or even barricade contests?
In Good Knight MacGyver it's again indicated about the MacGyver and M'Iver clans than there were three Iain's giving their sons the same name. Angus. Malcolm said they have the same name as Mac's first name. So again you can assume that he did know his first name.
So this is a fifty-fifty shot we've got here. Twice we've got an indication he did and didn't know it. But... there's a but here. When Mac found Iain in the dungeon he asks for his sons name. Than he says he was told Iain's son and him had the same first name and now he'll never know since Iain passed away. Another argument or a plot hole? This can indicate (for the 3rd time) he didn't know his first name. And than we can say MacGyver never knew his name because it's three to two of the negative indications. However Malcolm did clearly say they have to same first name as Mac's. So in fact Malcolm did know Mac's first name.
Because indeed like Traveller said: maybe he always did know his first name and the revelation of the 'Angus' name is the confirmation that not only they have the same first name but also that MacGyver is a distant relative of that Iain MacGyver and until Sam's appearance the only living relative left of the Scottish MacGyver clan.

Even if Mac didn't know his first name at first, maybe they could've made an episode somewhere between Serenity and The Lost Amadeus (or sooner like in the third season before Hell Week and Nikki finding out) involving an adventure with him discovering his first name somehow (by accident or something) and him saying: 'That's my first name?' Keeping it a secret for the rest of us until Good Knight MacGyver. Than at least you can tie that up to Lulu's remark: 'that's your first name'.
And he could've made up some excuse to Mr. Newberry about his first name or even stop him before mentioning it.

I think the poison that was used was applied to this knife, passed to the mutton when it was cut and then activated by the wine. - MacGyver. Sometimes you just have to die a little inside to be reborn and rise again as a stronger and wiser version of you. It's better to be a little sad than to be fake content.
