If you think about it, Mac is the luckiest and the most unluckiest guy to ever walk the face of the earth. First of all, have you ever seen anybody like Mac who faces such crisis and brushes with death on almost a daily basis as him? He cant go anywhere without something majorly bad happening, whether robbers, hit men, assassins, friends getting killed, natural disasters, etc etc. But on the other hand he is like a cat and has nine lives and then some, he always avoids death, with the exception of Passages. Sure, his skills gets him out of many of these jams, but even some of his MacGyver tricks are blessed with luck. As much as I have always wanted to be MacGyver I don't think I could handle a fraction of the stress involved in being face to face with almost certain death all the time!

Seems to me that Mac is always faced with other people's bad misfortune.

He is usually having a great day when suddenly, Penny happens to arrive at his house unnanounced with..yes..you guessed it! Trouble!

Or, Jack of course. Need I say more?

Pete usually begging Mac to take on a "small" favor. Which usually ends up being something BIG.

Even when Mac is on his own, he could be having a great day till his tyre bursts on his Jeep.
And then you get those bad day gas attendants.

On the other side of the coin you could argue that he wouldn't be doing those kinds of things if he didn't enjoy it which he confirms in this quote from The Enemy Within episode...

You could also say that we don't actually know how far apart the episodes were from each other within the MacGyver universe. What we were seeing as a weekly occurrence may in fact have been based weeks apart from each other in MacGyver's world.

It's analogous to a hockey game. You've got 60 minutes to get it done and along the way there's an opponent who's gonna try and stop you, punch you, whack you, outsmart you, and prevent you from coming out on top.

Having death around him on a daily base.. they always say death/danger lurk in a small corner.

But indeed as Kiwi says it's hard to tell sometimes how many time there are between episodes. You know Mac burnt his hands in Blind Faith and even though he says that he's going to heal, I think there should've been months in between to his next adventure. His hands fully healed, burn scars are usually for the rest of your life. Look at Rachel's hands in The Prometheus Syndrome.

I know I think after a while you get used to it or just know how to react in certain situations.

It's just in the character I think. Like he said in The Enemy Within he likes it. And he can't leave puzzles alone as he stated in Ghost Ship. It's also not like him to just turn his back like everybody else would do.
