After a lot of Internet research, I came across this site where there are various MacGyver episode scripts for sale. Take a look at the link for the episode "Three for the Road":

If we could somehow obtain (buy?) these scripts, maybe in them there will be written exactly what knives have been used in each episode...

Very unlikely. The writers wouldn't have known the model names and I remember RDA saying in an interview once that they just grabbed a knife from the pile unless they need a specific tool then they found one with that tool.

No. I have several original call sheets and when SAKs are needed in a particular episode/set/scene ... they are all only generically referred to as a "Mac Knife". So, my guess would be that if there was a particular tool needed other than the common denominator ones .... somebody within the prop department would be responsible for and to make sure that that model was at the set location, well oiled, working, and ready to go for the shoot.

Are we to deduce that carried several Swiss army knives around most of the time, or that he just instinctively knew which to take with him on each adventure?
