Remember: 'It's perfectly harmless, MacGyver. It's perfectly harmless.'
Besides that: MacGyver runs the show.
Seriously: MacGyver said no weapons. So I think that was to assure he wouldn't get killed himself in case Murdoc would try something after all. There wasn't much for Murdoc to do than if he didn't had any weapons. This is also that 'MacGyver saves the day' kinda thing and 'the peoples around him watch him how he does it.' I think there were some nice unexpected moments in the episodes like the lights not going out when it was supposed to and getting to the shooting range.
I think it was good Mac took control of Murdoc sort to speak: 1. no guns, 2. turn yourself in. I think it was the only way that Mac could say: I'll help you but you will do as I tell you or I walk away. You need me, I don't need you.
You might wonder why Murdoc needed Mac in the first place if he knew about the shooting range and considering his skills as a hitman, you might think he can pull it off himself. The only moment he really needed Mac was to get through the snakepit.
I think this episode lacked one deep conversation between the two adversaries while prepping their plans to save Ashton. You're arch nemesis asks for you help, you might expect they had some time talk things over.

I think the poison that was used was applied to this knife, passed to the mutton when it was cut and then activated by the wine. - MacGyver. Sometimes you just have to die a little inside to be reborn and rise again as a stronger and wiser version of you. It's better to be a little sad than to be fake content.
